Mississippi Pot Roast
Callie Akins from season two was highlighted in the 'Next Generation' segment by Lexi Marek. Callie is a cotton and cattle FarmHer with a degree from Oklahoma State University. She says, "I love this recipe because it is super easy and can be done ahead of time when we have a busy day working cows or in the field.
1 (4 lb) Chuck Roast
1/4 c. Butter
1 packet ranch dressing mix
1 packet dry au jus mix
4-5 pepperoncini peppers
Place roast in the slow cooker and sprinkle the top with the ranch dressing mix and the au jus mix. Place peppers on top of the mixes, and add the butter.
Cook over low heat for 8 hours. Serve with noodles, rice or mashed potatoes.
