According to a new, pre-published study presented at Nutrition 2024, the annual meeting of the American Society for Nutrition, young adults who ate three servings of carrots per week for four weeks saw a 10.8% increase in carotenoids in their skin. This antioxidant prevents inflammation and promotes heart health.
The study also compared groups that did not eat carrots and instead took a multivitamin supplement with additional carotenoids, as well as another group that consumed a combination of the carrots and the multivitamin. The final control group consumed neither carrots nor the multivitamin.
Regarding those other groups, the researchers found the group who only consumed the multivitamin did not experience increased carotenoids in their skin. Additionally, the group that consumed both carrots and the supplement experienced the most benefits, increasing their skin carotenoids by 21.6%.
